    Making some dinner tonight.

    Cajun crawfish sausage.

    Now the red beans-n-seasoning. Low for around 3 hours. Rice is in another pot.

    Beans N sausage done after a 3 hour low simmer. Now uncover for about 45 mins so the roux can thicken some.
