when preparing a butt should you trim any fat or leave it all, should you put rub on the night before or the day of the smoke and should you put the fat up or down and does foiling the butt change the bark
 
when preparing a butt should you trim any fat or leave it all,  I only trim if it is over 1/4 inch..  should you put rub on the night before Yes..or the day of the smokeYes, some will have gotten wet and come off unwrapping and handling...  and should you put the fat upYes... or down and does foiling the butt change the bark Yes it will soften it but you could always go in a 400*F oven to crisp it up...JJ
 
JJ covered every thing well. I only have 1 thing too add. I smoke unwrapped till the IT is 200-205 then I wrap, with some of my spritz in the foil, and let rest for several hours in cooler lined with towels. The bark does soften up but not falling off soft. I do not see the need to firm it back up, for PP. Now you might want to firm it up for slicing, but I never slice my butts.
