Hello everybody. I'm a frequent reader, infrequent poster here. I'm about to do a 16 lb spatchcocked turkey on my offset. I did the slaughterhouse brine, and left it out in the fridge long enough to form a nice pellicle. Now I'm wondering if I should do butter under the skin? Brush periodically with butter? I don't usually do a rub if I brine the bird. I don't have an injector, or I would use that. Is buttering this bird on the outside going to offset the smoke adhesion that the pellicle provides?
