Decided to smoke up some yard bird today.. Wife bought twice as much as I needed for our Monday night dinner.

Took two breasts and five thighs and injected them throughly with a mixture of melted butter, worchestershire, apple juice, and Creol seasoning. let rest in the fridge for 4 hours.

Dusted the tops with black pepper & creole seasonings, and put into the MES at 260 degree's with lump coal and a mesquite chunk.

that does sound like a good inject-I also smoke plenty on the WE.to last a few dinners.
 
Just do what I did.. Buy another freezer LOL I have two uprights in my garage. One of them is nothing but meat. When i dont harvest game, we buy hogs, half cows, and ect. saves in the long run. The other freezer holds prepared and smoked foods. Works well for us.

Chicken almost done. Breasts are sitting at 140. smells great!

Ok so my photo host is not responding right now, so I will post the final pic later, the flavor is awesome.. best chicken I have done yet.. I highly recommend injecting piece parts with this mixture. I spritzed by the way with apple juice, Apple cider vinager, and Patron orange liquer.

Injection ratio is:

1 cube butter
1 TBSP worchestershire
2 TBSP apple cider
1 tsp Creole seasoning

This is enough for about 4 lbs of chicken pieces.

Ok here was the finished product. No plate pictures. We buffet styled it tonight. Got an extra 20 minutes on the elliptical ahead of me.. Even my salad tonight was high calorie..

Chicken got high reviews amongst the family. Even the white meat was tasty.

No kidding about the freezer space. Going to have to add another one, and possible another fridge too. Going to be a busy summer

Injecting piece parts was a first for me.. I too always just brined when it came to dissassembled yard bird.. Not that I dont love my brines, but this had such a great flavor, that it will be a top request from the family for awhile. Wife came home with more yard bird today. I have a request for smoked chicken on Saturday with a smoked chicken soup for Sunday. Then ribs for Monday.
