Decided to smoke up some yard bird today.. Wife bought twice as much as I needed for our Monday night dinner. Took two breasts and five thighs and injected them throughly with a mixture of melted butter, worchestershire, apple juice, and Creol seasoning. let rest in the fridge for 4 hours. Dusted the tops with black pepper & creole seasonings, and put into the MES at 260 degree's with lump coal and a mesquite chunk. More Qview to come!
