After checking the forum about winter smokes I decided to give it a whirl.

Browning Box style propane smoker.
Mesquite Chips with birch chunk

Moved the box and tank near my deck door. (safety first with extinguishers yadda yadda yadda) Easier to see the temp on probes and benefit from wind blockage.

Outside was 17F , some sun, no wind. Perfect day to fire up the smoker.

Able to hit 400f. Burning off the winter blues that built up inside. Not sure how the leaves got past the custom cover.

Lots of steam.

Slathered a bone-in 8.5 lb porkbutt with table mustard and Bilbo's rub. 240F ongoing. No spritz. Less than a quart of h2O in catcher pan. Looking for a big bark.

Amazing how the cold weather allows for instant temp correction.

Gotta go grab a pic.

Having a long stall.. been stuck at 175f for an hour.

Temp outside is dropping but am keeping smoker at steady 250f now.

Got a late start. Good thing we do not have to work tomorrow!

First time i have gotten a bark like that.

Did not foil until it went in the cooler. No spray. Only mustard and rub. (first time with mustard)

Usually i have a bitter something from the rub but not this time. Pure fall off the bone pork with a taste to die for.

Wife agrees so all is well.
