So its really cold here lately and i needed to help out my smoker temps. I added two fire bricks to see if it will help. I've actually got a butt on there right now. So the bricks really help but almost too much. They rose in temp substantially after hitting my 225 in the smoker. It never got above 235 but gradually turning the heat down took 2 hours for it to level off. So to the point here, I put the bricks on a rack above the amnps a couple inches. Well I noticed not much smoke coming out a few min ago and opened the door to see all the pellets almost burnt through. They didn't even burn through the rows just all at once. Not sure what happened. I did preheat the pellets in the smoker this time before I lit them. Don't know if it was that or the brick being above it? My question now is do i fill it back up or do i risk to much smoke in the meat by doing that since it got basically a 10 hour dose of smoke over three hours? I did take the brick above the amnps out just in case.

Were the pellets still burning when you placed the AMNPS in the smoker?  I made that mistake once, walked away and came back a while later and it had burned through two rows!  If you didn't keep it lit, perhaps it re-ignited because of the bricks.

What are you smoking?

i just didn't know if it would be bitter from the huge dose of smoke in such a short time? Don't want to make it any worse if thats the case

If your using cherry wood pellets I would reload and smoke on. The butt is a good and thick hunk of meat and ican take a good amount of smoke. Then like venture said if you like alot of smokey flavor add more pellets.

That's happened to me a couple of times, and I did end up with a nasty bitter taste.  I figured it was happening because my burner was staying on too long.  Flattened out a foil bread pan & stood it up between the burner & my AMNPS.  Seems to have solved the problem for the most part.

If the amnps was between the heat and the bricks, it could have gotten to hot... The hotter the pellets, the faster they burn (I think)... And what SmokeKing said....

I did refill 1 row with more pecan. For some reason it was cooking faster than I had planned, must be from the bricks adding extra heat. The plan was to let it go all night with a done time early this morning. At midnight it was at 170 so  pulled it and put in the fridge and put it in the oven this morning to finish it off. So I'll let ya know here how it went in a few hours

Turned out great. Could have used a little more smoke though. Only problem now is the couple supposed to come for dinner had to cancel so now I'm stuck eating 8.5 lbs myself. Darn
