Here in Texas We are under a severe drought and have an almost state wide ban on outdoor fires.  ie. No Bar-B-Q pits at the hunting lease by order of Land Owner!  I have a Cabela's Electric Smoker which looks like this.... http://images.cabelas.com/is/image/cabelas/s7_516114_999.01?hei=380&wid=380   It will be our only means of outdoor cooking for quite some time with no significant rain in the forecast!

I need some cooking tips and especially how to do ribs. Thanks for any help or advice for a desparate novice smoker!
 
I modded my ECB charcoal to an electric this summer, and love it. In Colorado the weather and temps change by the hour sometimes, and every time I went with charcoal and wood it would rain, wind would blow, then the sun would come out and be 95, all within a couple of hours. Also I'm lazy, so I bought the electric attachment. The temps stay more consistent, and you can still put the wood chips on to smoke them.

If you are doing ribs, do the 3-2-1 method. I smoke them on the racks with just a mustard/rub combo for 3 hours. Then I foil them with beer, butter, and honey for 2 hours, then put my favorite wet sauce on for an hour or more. The last two times I have done this on my electric they have been amazing.
