Burgers question

  1. Tommorow I'm going to grille some burgers (ground chuck) on my gas grille. They will be hand made patties. I've never figured out how to know when they are done (not burned & not pink in the middle).
    Is there a sure way to know when they are done besides of breaking open one in the middle to see ?

    No I am in the same boat as you I am never sure if they are done. Good think is I like them a little pink so if I under cook them a bit I don't mind. Have you tried smoking burgers? It is awesome. My dad use to make them for us and we went nuts over them. He was hot smoking around 300 so they get done pretty fast but they still have a nice smoke flavore that isn't overpowering. I would highly suggest trying them some time. Hopefully someone has a trick on these burgers. When I make them they are so thick that its hard to know what the middle will be like.

    Look and the color of the juice running out of the top of the burger. Take the corner of your spatula and slightly pierce the top of the burger when you think it is done. Lightly press on the top with the spatula, letting the juice run on the spatula - if dark red - then still not done, if light reddish in color then still pink inside about medium-medium rare, if golden then are cooked about medium well.

    rbranstner: I may try smoking some burgers when the weather is nicer while smoking something (along with ABT's---we love these things).

    A lot of the time that i cook burgers, I stuff them, with cheeses, chili, mushrooms, my family loves them this way. i never smoked burgers yet, I'm new to smoking food, but I'm gonna try it for sure.

    I to like stuff my burgers with differant stuff and cheeses. Now for get them cooked to the right temp I grill mine about 6-7 minutes on one side and then about 5-6 minutes on the other side. Now on the first side you will see the juices starting to come out of the burger let it go a couple of minutes or so and then flip. Now when you are poatting the patties out I use my thumb and put alittle indention so that the burger wouldn't puff up in the middle. So there you go and thats my way to the perfect burger just medium rare for me.

    I love to stuff them with pepperjack cheese - I hate overcooked burgers so mine always have plenty of pink. I have 20K BTU burners so mine cook pretty quick - 3-4 min per side. This does not comply with FDA safety so I am not recommending it for you - just stating what I do for me.
