I have a mes. I've done pork shoulder as well as chicken thighs with great success. now I'm ready to move on to jerky. I would like to try a Burger jerky first. I'm not royalty against using a cure but would prefer not too. if I use lean ground beef can I get away without it? I will probably vacuumed bag whatever is not used right away? any recipes for ground Turkey?

I have done burger jerky before & I would recommend using a cure on it.

I use the Hi Mountain brand of mixes. Good flavor every time.

Here are pics of my last batch that I did yesterday..

The mix that I used on these was the Cracked Pepper & Garlic.. From Hi Mountain. They tasted great.
