Working with what I have here in Fiji and trying out new flavor incorporating old ones.
Beef in Fiji is really tough.
Hitting temperature... I'm asking for the best overnight marinade for beef

Oh.. Soak pork in coconut milk 3 hours... Try it

Welcome smokingf1j1!  Sounds like you've got some challenges over there.  Also sounds like that coconut milk with pork is something I've got to try!  Thanks for the suggestion. 

Looks like you are asking for a beef marinade.  I use the following recipe on skirt steak, flank steak, and flat iron steak.  It is my favorite beef marinade, something I learned while living in South Texas decades ago.  I would also use it on sliced chuck to make a type of carne asada.  It is enough for 2-3 lbs of beef.

1/2 cup olive oil
1/3 cup soy sauce
1/4 cup lime juice
1/2 onion, chopped
1 tsp mined garlic
1/2 tsp ground cumin
3 Tbs dark brown sugar or Mexican brown sugar, packed.

Since you are in a tropical environment, you might also want to try a Mojo recipe.  I've had this recipe in my "try it" file for quite some time. Same cuts and amount of beef.  I found the recipe online.     
  • garlic cloves, minced
  • 1 jalapeno, minced
  • 1 large handful fresh cilantro leaves, finely chopped
  • Kosher salt and freshly ground black pepper
  • 2 limes, juiced
  • 1 orange, juiced
  • 2 tablespoons white vinegar
  • 1/2 cup olive oil
