Thanks nepas! It is still earning its keep. To be completely honest I wish I would have built it bigger to keep up with the size batches I have been running. :)

I have found the flexibility of having both electric and propane is a huge advantage. I use the electric for cold smokes as well as dehydrating and the propane for warm smoking.

I can't believe I missed this post. I never tought I could build my own as I have no metalworking or welding skills, but.......I am a cabinetmaker. Thank you for this post. I think I found a cool project for next winter.

Very easy. My burner has a needle valve on it. I use the hot plate for cheese though. Propane would get too hot.
 
I think today was the wrong day to test it out. Yesterday it was in the mid 60's while today it was in the mid 40's and very windy. With a single cheap 1000 watt burner I was able to get 120* and maintain it. When I added the second 1000 watt burner I was able to hit 160 and maintain which is about what I am looking for. I added some wood chips to a cast iron pan and looked for leaks and didn't find any so I am pleased with our construction. At this point I have some concerns about temps. I may pillage some burners from a stove a buddy has since I have 240v wired in my garage for a welder or I may look into a turkey fryer burner. More to come...
For the interior burner in my smoker I purchased a nice low pressure low profile outdoor cajun cookware burner.

From shoppers choice.com.. It works great for the smoker! had to poke a few holes in the burner because the black paint had closed a few off.
