Well will a water pan work on a vertical smoker if i have a sheet over the pan seperated from the cooking chamber to eliminate the need for tunning plates....work?there is a space between the inside wall so smoke can enter at holes in the top and exit out of the smoke stack. Will the water pan still work that way?
 
I have large vertical cookers. For water I use steam table pans. sit them low in the smoker. then I put lids on them that have the cutouts in the corners so the moisture can escape. this allows me to keep the water pan in the cooking chamber where it is needed, without the pan getting full of grease.  if I need to add more water during the cook I use a long neck funnel,  and a pitcher.
