I can't remove the bowl. Can they get stuck?

More importantly, the safety knob seems to be missing the conductive part that the bolt connects to. What does this part consist of? Seems like some sort of rod perhaps. 

Any searches just seem that sales info.
 
I'm not sure what model we use at work but the bowl spins clockwise to loosen and the safety bolt thing looks like a T.

I know it's an older post but....

Hello Matt, cruise to Hobart's website (I used Hobart Food Service) and follow the links to equipment manuals where you can download any of the spec sheets, parts manuals or operators manuals.  they used to require a login ID but don't anymore.

I suspect that you've already figured this out but sometimes the bowls need a pretty good snap of the wrists to get loose.  Just be sure the blade assembly is off the machine before you loosen the bowl as it will likely stike the blades otherwise.  FWIW, most used bowl cutters have improperly adjusted blades.  They want to sweep withing 1/32" of the bowl.  I have three bowl cutters, all bought at auction and all had very poorly adjusted blades (dull too...)

Are you in Upstate NY?  If so I may be close by (I'm in the Auburn/Skaneateles area).
