Buckboard Bacon

  1. I got my new smoker, Traeger Jr., Pellet.  Its all seasoned and ready to go. My question is this, I have a Buckboard Bacon Kit and will follow instruction to the "T".  I just bought 6lb fresh side meat, do I leave the skin on while it cures for 10 day?. Thanks

    Your choice some remove it before curing some after and some after it's smoked so try it different ways until you find which method you like best

    I like to remove it before, as we like to turn the skin into pigs ears for our dogs.
  4. I guess I was concerned with the cure getting thru the skin side.
