Best laid plans of mice and men... Last week I started a  "Corned Beef" thread where I dropped a nice trimmed brisket flat into a pot of Pops Brine with a few additional pickling spices.  As the 7 day cure went on my craving switches  from corn beef and cabbage to smokey pastrami!

I think I made a great choice!


As I said earlier this 4 pound brisket was swimming in Pops Brine / Cure for 7 days. 


A bit of a soak in fresh water for 2 hours, then place on a rack to dry out a bit. 


Seasoned with paprika, onion powder and pepper. No salt in the rub as the meat already has plenty!


Into the MES pre heated to 225.  Using Apple pellets in the Amazin Smoker. 


Half way through the smoke. I'm looking for an IT of 195 degrees. 


Once the beef hit 195 I wrapped it up and tossed it in the fridge over night. Sliced and bagged the next morning. 


Sliced. ...And of course a few samples!


And Bagged...

Yeah I've been putzing around the grill and smoker all weekend.  The rain won't stop... So I made the best of it and started cooking.  I'n done though... Taking it easy today.  I've got a 6am flight to Philly in the morning.

I went in to our local branch of Sainsbury's and found this:


I know its top side, but at that price I couldn't resist.

Think I'm going to use your recipe, I'm inspired!!!!

Just wondering, no jumiper berrys? Not a big gin fan?

Happy Memorial day buddy. I used a commercial pickle spice. (Williams) and it had Juniper in it.  It was a bit skimpy (my opinion) on red pepper so I tossed in an extra table spoon of flakes in.

Whats cooking?

Not much, waiting on that new smoker to get here. The MES30 is sitting idle and I have chicken thawed but really just not feeling it today. Course that could change after the ham & Cheese poboy digests from lunch.

Did you oder one of those fancy blue tooth MES units? Did they tell you it won't work on a Jitter Bug Phone?  LOL

Bah you're too far north. Those folks down between San Marco and New Branfels, I feel for them, but they always get the most rain in the hill country.

You ever go to Schlitterbaum? With that new rock hard six pack might be a good time to take the bride and show off for some slippin and sliding.

<Whispers> Ya know, I know who sold most of the original order of that pipe. /wink /wink /wink

They said my land line wouldn't work with it.

No... I have not gone to the water park Schlitterbaum... I'm so fat I'm afraid I'd get stuck in one of the tubes.

Still on the land line... ?  Have you noticed that funny looking tower those strangers put in your backyard?
