So for my brother that was coming home from Georgia to visit, we decided to throw a party, so we did 18 racks of baby back ribs, and one spare rib. The picture below is when we just put them on at 9:00 am in the morning, after 2 1/2 - 3 hours of smoke we foiled them, I did the 3-2-1 method, and for the first 2 1/2 -3 hours just kept the smoker at around 200° while it smoked, and after foiled kicked up the heat a bit to 235° for 2 hours, and then pulled them and started to sauce them to get it to caramelized, and pulled them about a hour later as seen in the last picture. This picture here was just before I pulled them off the smoker, the top rack had sweet baby rays on it, and the bottom one had a homemade bbq sauce that I made up, both top and bottom rack have the same rub on that I made up. Every one loved the ribs and loved my sauce better than sweet baby rays, so I guess I will be making more of that sauce in the future.
