So for my brother that was coming home from Georgia to visit, we decided to throw a party, so we did 18 racks of baby back ribs, and one spare rib.


The picture below is when we just put them on at 9:00 am in the morning, after 2 1/2 - 3 hours of smoke we foiled them, I did the 3-2-1 method, and for the first 2 1/2 -3 hours just kept the smoker at around 200° while it smoked, and after foiled kicked up the heat a bit to 235° for 2 hours, and then pulled them and started to sauce them to get it to caramelized, and pulled them about a hour later as seen in the last picture.


This picture here was just before I pulled them off the smoker, the top rack had sweet baby rays on it, and the bottom one had a homemade bbq sauce that I made up, both top and bottom rack have the same rub on that I made up.


Every one loved the ribs and loved my sauce better than sweet baby rays, so I guess I will be making more of that sauce in the future.


The Shrimp I was doing along with the ribs, can't find any pictures of the wings.

Thanks that's the most ribs I have ever done, and they all turned perfectly.
 
No pellet pusher straight wood and some charcoal and lump coal at varies times.
 
There was maybe 3 full racks left over that I believe my brother took back home with him, there was other food that I did that day also that I did not get pictures of, which consist of 5 lbs of wings, and 3 lbs of shrimp skewers.
 
Plus everyone that came to see him brought a dish, lets just say you did not go hungry, and have to think my friend Derrik that brought the long island ice tea, they were great.
 
How do you guys get the gray out section of text underneath your post?
 
Nice load of ribs.  With you cooking all that food for him coming home I'm guessing he's got some dirt on you that you want kept secret.  LOL
 
HaHaHaHa, No we had a good turn out is all, I was feeding a lot of people that day, friends and family, he hasn't been home in a while, and plus it was a surprise birthday party.
