Broke the WSM's Virginitiy for a NYE BBQ (QView)

So I bought myself a WSM 22.5 for xmas (merry xmas to me merry xmas to me!)....and haven't had a chance to use it till New Years Eve :(  So i decided to go big for my friends NYE BBQ.  I smoke a 7.6lb Butt and 3 Full racks of baby back ribs. 

Used Jeff's rub on both the ribs and the butt! I made a homemade Bourbon BBQ sauce which i got from another forum but only used it for the chicken wings i did (grilled not smoked)....didnt need sauce. 

I also switch from the normal 2-1-1 rib method (which i had issues with) to the 2-2-1 method!  i'll never go back haha.  the ribs fell apart as i tried to tong them off the grates.  The best ribs i've made yet!  The butt took about 12 hours...sadly we were all pretty stuffed by the time it came out around 11pm so not much was eaten but alot of take home bags were made

Sorry no money shots...as soon as the food came out it was chaotic with 25 hungry people.

Glad to hear the first run was a success and everybody was happy. Nice thing is once your friends know you can make good que, they start requesting it a parties and what not... lol.

haha that's what i'm hoping for...but i wanna start making a little money off it...so they better not think its always free lol
 
Doug, congrats on the new WSM. The ribs look great also. You should form the door to the smoker so that you do not lose a lot of smoke and heat, I have heard of people taping the door shut.

i'm glad you mentioned this! on the right side its formed pretty well....but on the left as you can see there is a gap.  i dont really notice much smoke coming but better safe then sorry.  any suggestions on how to form it? hammer? bend with pliers?

Use your hands not pliers. With pliers you might put a sharp kink in it since it is ligh aluminum. You can also wrap a 2x4 in a towel and use that as a form to push against, the idea is to not push against a hard 90° angle and create a sharp crease. Just do a little bit at a time.
 
Man that would be nice to sit outside with shorts and T-shirts on New Years. I was snowed into my house for several days with the back to back blizzards we had. Glad to hear your first some on the smoker turned out.

Yes sir Rbrans it was nice and I think that they most have been in Fla. For it was in the 70°s here and shorts and t-shirt were the dress for the day and then the rain came. But your ribs looks good so far and if the butt didn't come out till everyone was full or gettin drunk. The meat last a good longtime in the refig and you can re-heat it anytime.
