Will a brisket cooking at 225 cool off a little bit as the smoking is occuring?
Yes, they most certainly can. You are in the stall (plateau) when this occurs. Depending on the smoker and ventilation, I've seen this occur anywhere from the lower 140's to upper 160's range.
Just hold your chamber temps steady and let it ride. It will test your patience and make you second-guess your probe readings, but things are going fine.
