Been wanting to do a brisket so did one yesterday. I followed Bear`s step-by-step with great success. I seasoned it with what else Slap-Ya-Mama !!!!!!!   Put it in the frig for a couple of days to rest and started the smoke yesterday at 8am and it took 12 to get to 200* IT. I tell you this thing was like BUTTER..When I foiled it at 160* I put some beef broth in with it. I used Hickory chunks and Apple chips for my smoke.
