I haven't posted in a while. My travel schedule for work has been brutal of late. Got home yesterday and had a hankerin' for some brisket. Rubbed and into the Smoken-It #2 at 225* with oak pellets in the AMNPS around 9pm. Done around 9am at 195*IT. Wrapped in foil and rest in smoker (I let the #2 cool a bit while I was wrapping up the brisky) for a couple hours. It was a small prime brisket around 10lbs. Came out superb I have to say. I really like oak for briskets. Looks a little dry in the pics but was not at all.

Thanks, I'm proud of my bark, I must say, and I loooooooove bark.  The bark has been fantastic on everything for the last few months. I am tickled pink about it.
