Brisket time

I did not add any liquid to the pan.  Still very moist as there was enough fat to keep it from drying out.

My temps were all over the place.  As low as 230 and as high as 300 at times.  I used a Brinkmann Trailmaster which has a side firebox.  This is the first coke I've done on it so I'm still trying to get the hang of it.

Nice smoke ring on that brisket. And way to be brave on doing a brisket for a first time cook on new equipment! Looks like you nailed it.
