I just picked up a nice Brisket from GFS.  $2.59 per pound.  Every place else was $3.99-4.99.  Cooking it later this week.

  2. Nice...don't forget the q view!

That's a good price for Gordon. I have to say, that's my favorite cut of Beef .

Good luck on you journey through the cook, I'll be watching [IMG]   and waiting for the Q-view.

Have fun and as always . . .

Started at 0720 this morning.  Interesting to see how long it takes.  A little over 11lbs. Hoping to keep temps around 250-275

    Qview start.....

What IT are you going to remove it? are you going to foil?

    Happy smoken.

I plan on taking it to 170 and then either wrap in foil or put in foil pan and cover with foil, then back in the smoker till 190-195.

Looks kind of strange. You can't really make out the flat. Like it curled up or something.

Just hit 171. Just shy of 7 hours at this point. I put it in a foil pan and wrapped the top with foil. Now lets see how long till 190.

Done. Hit 192 so I checked it with a tooth pick and it seemed good. Pulled it off and wrapped it in foil and a towel, now resting in a cooler. Looks like I pulled it just in time too, a huge rain storm just started. That would certainly mess with the temps on the smoker.

Equal parts kosher salt and black pepper.  That's it.  The pepper is a slightly larger grind of pepper than a table fine grind.
