Brisket Smoking to Commence....(pics too!)

  1. I am preparing an evening of brisket smoking....the wife and kids are out of and chips have been purchased. I've attached pics (sorry for the poor wife has the camera) of the brisket (5.5 lbs). I've applied Jeff's rub and plan on starting the smoking about 10pm tonight. By morning I should have some more pics for you.

    I plan to mop with apple cider. I'm using a mix of oak and apple wood to smoke the meat.

    Keep checking back. Wish me luck!! I've learned a lot since I killed my first brisket!

  4. I saw the meat saber was working on and couldn't wait any longer. It's 9pm my time and I just put the brisket on!!!! I'll give you an update in 2 hours......

  8. Somebody should get some sleep tonight.....

    It looks good and smells even better!!!! I took a pic, but for some reason it didn't save....damn!!!! The smoker is two hour pic. I will get one at midnight.
  9. 3 hrs in....140 degree's....long way to go. Time for a quick nap.

  11. So close (930 am)....185 degree's....smells so good.....looks great!!!

    I'm going for 200 degree's....Lunch is looking tasty!!

  12. I did it!!! I killed the first brisket...this time I made perfection!

    I attached the final pic before I wrapped it. Sorry for the poor picture quality...all I had was my cellphone to take pics with. Finally made it to 200 degree' only took 13.5 hours......

    I tasted it....wonderful!!! Now I am really hooked.

    What to do next weekend????

    An absolutely great looking brisket! I'm not sure what to suggest as a follow up. (It's always hard to follow roaring success.) But imho, great ribs are always good.

  16. I just unwrapped the brisket...pulled it...and had my first plate...EXCELLENT!!! I put some of Jeff's sauce on it (modified with a little habanero sauce....mmmmmmm)!

    Well worth the wait!!!!!!!!!!!!
