Hey gang hope you all had a great Memorial day weekend. Grabbed a 10.5 lb Saturday morning was beautiful for a flat nice amount of fat. Wanted a packer waited to long my butcher shop was all out, oops. Injected Sunday morning 7am fired up the smoker Monday 4am salt and pepper and my beef rub then on the smoker 5am, 250 deg for 4 hours temp was 160 deg let her run for another 35 minutes to an hour temp 165 then comes the stall with packers I let em ride, but flats I've had better luck when wrapped. Back on smoker for 3 and half hours temp 196 wrapped for 2 hours in blankets in cooler reserved juices put back on smoker to set bark was delicious. Suddenly best friends with all the neighbors bbq makes everyone happy.


 

Good looking brisket man! It's funny how many friends you suddenly have when you make some Q!
