Hi All- this is my first Brisket smoke in my MES 30. I'm using Apple pellets in my A mazen. Start at 930. Been getting solid smoke so far. I lit both ends and let it go. I have been running between 155/160. I haven't opened the door yet so not sure what it's running at. I am using. 7lb flat. Pic below with just S&P. Any advice?

 
4 1/2 hours in meat is at 167. What # Is best to pull it out ?
 
It is done when a Probe slides in all over with little resistance. This will happen anywhere from 190 to 200°. What you got looks nice...JJ
