My sons first communion is coming up.  I am cooking two briskets ahead of time.   We will be heating them up super slow in a crockpot with my injection as a juice.  My question is do I cook to full 195 or pull a bit early since I will be heating it up in a crock?  The reason for asking I don't want shredded beef.  I have never heated briset in a crock pot before.
 
Hello.  I have never re-heated brisket for a party.  For left overs yes as it is left overs for heavens sake.  I see you have been a member for almost 1 year now but I don't know your experience.  Please forgive me if I am preaching to the choir so to speak.  When wrapped in foil with an Au Jus, then a blanket or towels, and into a pre heated cooler, those briskets should hold well for 4-6 hours without a reheat.  Might be a long day for you but that should allow plenty of time for the service and you can avoid the re heat altogether.  Just food for thought.  Keep Smokin!
