Good looking Brisket Papa.

Question about your smoker - how do you like it? Pretty easy to keep temps?

Have you used it in cold weather yet?

I've heard a lot great things about the smokers from Shirley, very impressive. That's actually the model I was looking at on their website.

Just wondering your thoughts.

Congrats on the new smoker and on that brisket  Nice job

Pretty easy to keep temps? Yes, no different and in some ways easier than charcoal. (Note: this is not a "set it and forget it" type of rig.)
Have you used it in cold weather yet? No but I plan to. I cook all year around. My cutoff is anything below zero, I purchased the insulated firebox to help.

That's actually the model I was looking at on their website. Go to the Facebook page to better see up-to-date builds. They are custom units and they can make whatever you want.
