Well, started smoking early today figured it will smoke all day to and get it to 206 internl heat as recommend last weekend by the pros. We will see. Tried to post a pic did not want to pop up. Wil attempt later
 
Start probe testing around 190°. You want the probe to slide in easily. That can happen at a lower temp than 206 and if you go by temp only, you may end up with falling apart Pulled Brisket instead of tender slices...JJ
 
Probe in a few spots,you will have carry over temp.so as long as it is tender you should be fine.
