Your comment about the brisket reminds me of a scene from Jaws . . . where Roy Scheider says, "We're going to need a bigger boat."   That's a nice problem to have.  Good luck with your game brisket.

 You can foil and keep warm while the flat continues to cook.

Then make them when everything else is done.

But you don't have to foil.
 
Turned out awesome. One thing I need to research is trying the fat. Had to cut off a lot after the fact.
