    Our daughter is driving down from PA on sunday, Said she sure would like some brisket..

    Got the brisket in early. Was going to go with hickory but decided to use up some of the 60 lbs of peach pellets...YIKES

    Got the controller set at 3 hours on smoke, then going to 225

    So i was going to lower the brisket to the grate and said

    SELF

    Self replied, Now whadda want  [​IMG]

    Lets do this so we can have some-------- AHHHH-JU for topping the smushed taters

    Brisket at 176 so i pulled and wrapped in clear wrap. Try to use wrap form Costco, Sams, SF and the sort cuz the cheap store bought saran wrap is garbage.

    Double or triple wrap. Then wrap in HD aluminum foil.

    Now FTC is

    Foil

    Towel

    Cooler

    Then wrap the towel over it and shut the top of the cooler. Let it in there for bout 2-3 hours. The heat will come up and baste the brisket all wrapped up......Brisky goodness.

    That was a pretty nice "minimal" trim there.

    What do I steal first, the cheese or the beer?  OK, both!

    2 hours 40 mins of FTC so i unwrapped it. Still freaking hot.

    Saved the juice for some brisky sammys tomorrow....Hmmmm maybe a brisky panini to.
