Happy thanksgiving everyone!! So I'm smoking a brisket and two turkeys for thanksgiving and I had some trouble with fluctuating temps on my new offset this morning. I put the brisket on first since it was gonna be in for longer than the turkeys. I'd say it sat out of the fridge for maybe 30 min to an hour or including me rubbing it down and trimming. Since I had trouble with the temp I was concerned about the whole danger zone thing so I probed it at 3.5 hrs in the smoker and was at about 130. I cranked up the heat and got it to 140 right around the 4hr mark in the smoker this is not including the time it sat out of the fridge while I was prepping it. Should I be worried or not?
