Here is the brisket (11.69-LB packer) I smoked last night. I took it to 160° in the smoker, then put it in the oven at 200° all night. Got up this morning and put the oven to 250°. It cooked for a total of 17 hours. Not much of a smoke ring, but it sure it tender and tasty. I made some beans this morning, and the wife made devilled eggs.

A point for you Chris! Just because that looks great to me, and really oddly it was almost EXACTLY what we did at my house over the weekend too!

Looks Great. Smoke ring doesn't have to be that larger to taste great.

I did two in four days. What baked bean recipe did you use? Dutch's Wicked?
 
Looks great Chris. Brisket is my next experiment for sure (have only done 3 smokes so far, pork butt, chicken and ribs). I love deviled eggs, mmm mmm, mmm.
 
Chris, glad to see you're making use of your resources to get the job done. Looks very tasty, and I'm sure a good time was had by all.

Meowey, she says boil one dozen eggs. Then mix the yolks with 3-tbs mustard and 1-tbs mayo. Then add either 2-tbs relish or 2-tbs pickles chopped up. Mix everything then stuff the agg halves. Sprinkle with paprika.
 
I use my own recipe for baked beans, that I thought of after making Dutch's. I take a can of Bush's Baked Beans, add one can of diced green chiles, some ketchup, or Jeff's BBQ sauce (if I have some ready). Then I add some turbinado sugar, some brisket juice, and maybe a jalapeno.

I have a packer in the freezer about the same size - I've not done a brisket yet - but was wondering approx how long does it take to get to 160.
