I have noticed the lowest my oven thermometer will read is 300 , and most of the smoking recipes call for 225-250 is there anything I can do to lower this or will it matter?

Have you checked your therm in boiling water?

It should read 212-213.

A digital therm is a good investment.
 
I have a digital thermometer and it works fine what I'm referring to is my oven thermometer that I hang inside my smoker always reads 300 when I have my smoker set to the lowest setting

Are you saying your scale on the thermometer starts at 300°?

Or its gets stuck at 300° and will not go lower.

Either way you need a new thermometer
