I need to get a new pan for the charcoal on my smoker and will get one off ebay. Only thing is they only have the water pans which is the same thing but needs a hole drilled in the bottom. But how big of a hole? Any suggestions? And am thinking if it is a little smaller it might not get as hot and not burn up so much meat?

I am not sure as to the size. If it were me I would cut my losses and find a better smoker. The Brinkman will go threw  pans like babies go threw  diapers and you will have about the same results you are having now. That is pretty much the smoker a lot of us started with. Yes you can smoke on them, But it is much better when you can control the heat.

Happy smoken.
