I bought the Brinkman Gormet Electric Smoker at Home Depot for $79. They tell you to fill the bowl with water on the middle shelf. I assumed to keep the food from drying out, but on this and other forums, people say they fill the bowl with sand, or trade it for lava rocks or fireplace bricks. What's the reason for the water?

Mike , welcome and congratulations on your new toy [IMG].

You need ballast in the pan (sand , covered in foil ) to make cleaning easy  The meat will stay moist as long as you don't over cook [IMG]  .

"Suggestion" , gat a Maverick 733 thermometer. Todd Johnson sells them right on our 'Forum' . He is a great salesman and has great service . You'll be glad you purchased from him [IMG]  .
