Brine time

    I have a 7lb half turkey. I usually brine overnight but I need it quick this time. Can I get away with soaking the bird for 3 hrs?

    Yes you can. What is in your brine?

    In most cases, I think 3 hours would be plenty of time.

    Standard stuff, kosher salt, brown sugar, peppercorns etc...
  4. You can cut the amount of water you normally use. Which concentrates the brine. I've done it for salmon and steelhead I've caught. Just make sure you only leave it only for about 4 hrs or it will be very salty.
