Brian's Butt ... A beautiful thing.

    Once again work has gotten in the way of my cooking. I just haven't had much time to do much.  But this weekend I had some free time AND with some  "Where the heck are ya?" emails from Kev and SmokeUSome  prodding me along I ran to the market for 3 or 4 chickens.  As most of you know I tend to have meat A.D.D. and once in the refrigerated section  and sometimes all bets are off on what the original plan may be. A nice display of pork butts caught my eye.  Okay SmokeUSum / Kev. I'm back on track.  Happy now?  I am!!

    So I plucked this 8 pounder out of the refer. Looks nice!


    The very first thing in order is to mix a fresh batch of Jeff's Rub. If you haven't tried this rub your messing up. Advertised as a rib rub it works great for your butts.  It makes a nice bark that cant be beat. Buy the recipe on the forum. It's cheap but worth twice the price. 


    Jeffs Rub liberally applied to my Butt.  Sweet!


    Around 10pm I load it into the MES. Ive got the Maverick probe in the meat and the BBQ probe on the tops grate. I'm going to cook this butt at 225.  Using the A Maz N Smoker with Pitmaster Choice pellets. I say goodnight to my Butt.  ...And drag my other butt to the shower then to bed. 


    The next morning, 11 hours in the MES we have an internal temperature of 165. Just look at the bark on that butt.  

    It's a beautiful thing.  


    Now I place the butt in the drip pan. Add a little juice mixed with a few spoon full of Jeff's Rub and cover with foil.  I'll continue to cook in the MES at 225 until the butt gets to an internal temp of 195.

    After 16 hours in the MES at 225 degrees, the internal temperature of the Butt is 197.  I'll take it out and let it set for an hour before it's pulled.

    This was a 16 hour smoke for an 8 pound Boston Butt.

    Okay, I felt a lil' bit pervy clicking on this post title.  But, hey!  I like a beautiful butt as well as the next girl!

    And, yes, Brian.  I have to concur.  Lookin' good there, guy!

    Nice to see you on the forum, Brian.  Glad you had some spare time this weekend!!  Hope your work schedule lightens up soon so that we can see more of your…um, butt.

    The pulled pork turned out just perfect. Tender yet not mushy.  Juicy  Seasoned very well using Jeff's Rub and a little of my TLC.

    Maybe a negotiable item on that next evaluation, I mean they can't give you anymore money, it'd just throw you in another tax bracket!

    Looks like a great meal....... Have ya ever tried baking? LOL

    Eh... It's not everything.  I ask ya. Whats money without family, friends and lots of cheap scotch?

    ... And In fact   Just last night I was perusing a silly fellers basic bread and sweet bread recipe.

    But I can't make a biscuit without that poppin dough boy kid in the kitchen. He's an aggravating little cuss.

    I am trying to make buns out of Rollers bread recipe right now.

    Bet they would go good with your PP.

    Nothin like a great Sunday, get outta bed, start thinkin about your butt and how tasty it's gonna be, grab a cup of coffee.... Haul your butt outta the fridge, sip a little coffee,(possibly with a splash of Bailey's) ! Get your spices all mixed together & give your butt the rubbin of its life... No spankin allowed, just a good rubbin ! Let your butt and the rub get a little happy while the smokers coming to temp.... Toss your butt on the smoker and 15 hrs. later your butt starts falling apart right before your eyes.... So then all ya can do is start pullin your butt in a few different directions & get ready for a great meal.... :biggrin: :laugh1:
