Hi all,

I have it in my head to try my hand at breakfast sausage.  I know cure is not needed if the product is handled properly, but I was wondering if others used a cure or not for these sausage patties?  I am thinking of doing a pork & beef mix with the traditional breakfast sausage spices.

I have wanted to give this a try also.  Sort of like the breakfast sausage that Crackbarrel Restaurants serves.  Add cure and then cold smoke...pan fry & serve.
 
I am with Teke. I like them fresh or smoked. Cure them and cold smoke. Yes , you can smoke a pattie without a casing. Smoke at a very low temp. Do not have product directly over heat.You can also wrap them in muslin before smoking. Weisswurst
