Breakfast idea.....side item to be tried this Sunday!!!

I just had the idea this minute, I am going to try it for Sunday brunch for Katie, my wife.

She loves apple pancakes with sausage, and has been hinting for it soon.

The apples are starting to come in, one has made me excited, ginger gold apples are great.

I was thinking of coring them filling them with breakfast sausage and putting a big ol hunk of cheddar on top.

I want to smoke them, over apple wood for a couple of hours, maybe glaze them with maple syrup.

now put that with your pancakes.

I want to hear your thougts before I start, and I will post q-view and post my Pancake recipe as well. My pancakes are awesome, they are a little bit of work to make so that is why I save them for speacial occasions and special once ina whiles too.

well c'mon, I wanted improvements!!! You can't tease me with something as wonderful as praline sauce and not give the recipe?

I used to live in Savannah, Ga, I love pralines, I have even made a praline fondu for a cooking class.

Oh! did I mention another recipe?!?!

maybe I'll give you the praline fondu for the praline sauce.... insert eveil laugh here.

it was just a recipe we got, looking for apple pancacks.........

momma's not home..........when she does, i will ask her for the link.......but MAN..............lil bit goes a long way.........SPECIALLY on ice cream...........LOL
 
sounds wonderfull. a hot cup of arbuckle's coffee with it and in heaven ya be..
 
Well, here it is.
they sold all of the gingergold apples, so these are the first of local fuji apples.
maple breakfast sausage, and 6 yr old wisconsin cheddar.




I hollowed them out after I got the core out. I used a mellon scoop, but I'm sure a spoon will work. I left a 1/4 inch or so of apple left as a shell.

I made sure there was a drain hole in the bottom, and loaded them up; about a 1/4 lb in each. then the cheddar on top.

I smoked a 250-265 until I reached 155 internal @ 2hrs over apple. the cheddar melted then formed a cheesey crust.

I glazed them for the last 45 minutes with maple syrup and black pepper.

Katie likes silver dollar pancakes, and she only wanted half an apple.


I also promised the pancake recipe.....The best pancakes i know of.

Cakey Buttermilk Pancakes



1 1/4 cups all-purpose flour
1 1/4 cups well-shaken buttermilk
1/2 cup melted unsalted butter plus 2 tablespoons for cooking
2 large eggs
3 tablespoons granulated sugar
1 teaspoon kosher salt
1 teaspoon baking powder, fresher the better


In a medium bowl, whisk together all ingredients except 2 tablespoons butter until evenly combined and moistened thoroughly (some small lumps will remain). Set mixture aside to rest while griddle heats or cover and store in the refrigerator to rest up to 12 hours before using. (If batter rests, stir briefly before using.)

Possibly the best looking apple I have ever seen! I am heading to town to pick up sausage and apples and im sure its great for breakfast, but it will be my dinner tonight, thanks for the great idea!

Thanks CG!!! I have a couple of mods for the next batch;
sprinkle either brown or maple sugar in side the apple.
mix cheese with the sausage.
and start the glazing earlier.
