I got a phone call from the Missus yesterday while I was at work and she informed me she wanted a breakfast fattie for dinner. She had already started prepping everything, put it all together herself. She used scrambled eggs, country gravy, ham, cheese, hickory smoked sausage, and hashbrowns. Even made the bacon weave. Not looking forward to coming home and smoking a fattie for a couple hours after a hard day at work, I let her know real fast that I was not smoking a fattie that late after working all day.







So after I got the wood burning and some nice coals built up I put the fattie on the pit and loaded the firebox up with pecan. A few hours later we finally got to taste it. I would have liked some green onion in it myself but to her it was perfect. She keeps bragging on what a good job she did with the fattie and I have to keep reminding her who smoked that bad boy and have to explain to her that she wasn't going to get that amazing flavor in the oven or on some gas powered contraption. All in all I have to admit, she did a good job of prepping it.
 
At least we all know its all about the smoke! Nice to have help that does good work I agree about the green onion!
