Bratwurst Suggestions ??

  1. I have just ground up some venison & pork. Its a total of 15 lbs and I am wanting to make some fresh brats. I have a Fresh Brat Seasoning pack from LEM that is for 15lbs. I have never made brats and was wondering if there is anything I should add to enhance the flavor.   Thanks for any help.
     
  2. I add three large cloves of (fresh) garlic and one small onion both finely diced after my first grind along with the seasoning, mix; and regrind a second time

    I add cranberry juice and dried cranberries.  Very nice flavor.  1 cup juice and about a cup or dried berries to 10 lb

    I will add a tablespoon of garlic sometimes to 10 lb

    I will also make beer brats.  I replace a cup of chix stock or milk and add a cup of beer to 10lb sausage.

    I use the Len Poli recipe for Wisconsin Brats. Its about as close to being a Johnsonville brat I ever tried.

    You can add some MSG (Accent) if it doesnt bother you... I added it to some venison sausage and it came out pretty good

     Yes Yes Yes garlic and if you are adventurer you can add 1/4 cup brandy
