Hey guys. I am as green as it gets when it comes to smoking. I love to grill so my husband finally broke down and let me get a smoker. One Home Depot Labor Day sale later, I've got a COS on my hands and 3 failed smokes. But, Im nit giving up. My son and I have already made some mods and temps seem to be evening out. Looking forward to smoking a fatty on Saturday.

Welcome SJ. Cheap offset smokers could be great smokers with a few mods and a little patience. Do a search on your model and you will find all the info you're looking for. There's definitely a learning curve with an offset, but if you stick with it you won't be sorry. There's a ton of great advice and recipes here. Good Luck!!!
