Brand New To Smoking

    My name is Martin and I'm currently living in the New Orleans area.  I'm originally from Modesto, CA, but let that be our little secret.  :)  I recently purchased the Masterbuilt 20070910 30 inch Black Electric Digital Smoker, Top Controller and I'm doing my first smoke this Saturday.  I have an 8 lb brisket and a couple of racks of ribs and I plan to use hickory smoke.  I really want this to turn out amazing so any tips you can give me would be appreciated.

    Have you signed up for the free 5 day ecourse?

    For the ribs Id do the 3-2-1 or 2-2-1 method. The brisket is it just a flat? or is it a whole packer just small?
