A loud and thunderous "HEY YA'LL" from a displaced South Carolinian in the Lone Star State.  After a few years of contemplating it I have finally decided to start smoking my own BBQ, this is going to be my first attempt at not only smoking, but also grilling with charcoal and wood.  I have already used this site a great deal to help me research my options on grills and smokers and figured i should join to give some feedback.  At this point I think that I am mostly going to be doing pork butts, ribs, and maybe even a little pork hash here and there.  Its a pleasure to join!

Now you will find alot of recipes and good techniques here too.
