Bradley 4rack digital Temp fluctuations

    Just finished seasoning my new smoker and I use a Maverick ET-733 to monitor the temps.  The smoker was set at 150 and the external thermometer read about 180 most of the time but went as high as 201 and as low as 145.  I preheated the wafer unit and the oven before putting a smoke disk on.

    I am making an assumption that the Maverick is functioning properly.  51 degrees over the set oven temp of 150 seems a bit much. The smoker temp readout did not fluctuate more than 10-15 degrees.

    The probe for the Maverick was lying on the middle tray.

    Any ideas or suggestions.  I want to smoke something tomorrow.

    LJ,   I have a Bradley 4 rack Digital smoker that I have used for over 2 years. There are temp variations between the 2 sensors mainly due to location. DO NOT put sensor directly on metal racks. If probe is mounted under meat it will read much hotter (30 to 50 F) than if mounted above. If no load in oven, put several bricks in to  simulate a load. You can check the accuracy of a thermometer by putting the tip of probe ( tip only) in boiling water., & it should read near 212 F.

      You will get familiar with the smoker by using it and taking a few notes along the way.

    Thanks for the response.  I am smokin some ribs now and the temps aren't that drastically different with the smoker loaded.  Looking for some good results.
