Just finished seasoning my new smoker and I use a Maverick ET-733 to monitor the temps. The smoker was set at 150 and the external thermometer read about 180 most of the time but went as high as 201 and as low as 145. I preheated the wafer unit and the oven before putting a smoke disk on. I am making an assumption that the Maverick is functioning properly. 51 degrees over the set oven temp of 150 seems a bit much. The smoker temp readout did not fluctuate more than 10-15 degrees. The probe for the Maverick was lying on the middle tray. Any ideas or suggestions. I want to smoke something tomorrow.
