So I am working on my weekend menu plans and just realized I have a box of rib tips. These are the ones that have already been cut down into small pieces. Before I had my smoker we would bake them until almost done and then finish them with a char on the grill and hit them with some BBQ sauce. Great appetizer/ second entree when having parties.

Anyway, I'm planning to hit them with some rub and throw them in the smoker this week. I'm planning on cooking them during the cook of a couple decent sized butts. Anyone have experience doing these in a smoker and know a ballpark cook time I should plan for? The smoker will be running about 225-230. :grilling_smilie:
 
I cut my Full Spare Ribs down to St Louis Cut Ribs. I then cut the remaining down to thin strips. They take about 2 hours at 225 to 250°F to get bite through tender similar to a Pork Chop. If you need fall of the bone tender then 2 hours of smoke and an hour in foil will get you there...JJ
 
Thanks. I was thinking around 3 hours. That gets me headed the right direction.
