Bourbon Glazed Pork Chops

Discussion in 'Pork' started by gary s, Oct 23, 2013.

  1. Actually did these Monday night, Was commenting on Bear's fantastic looking steaks and kind'a went from there> So I decided to post pictures  where they belong.

Thought I had 4 large chops had 3 large and 1 small decided to throw in a chicken breast to have enough.  Turned out real good was trying to beat the rain and dark. I told Bear my wife said se remembered this flavor from something she had before as we were thinking my son said "Whisky Peppercorn Steak at Oxford Street" she said that's it. Oxford Street took the place of Steak and Ale here in East Texas but has since closed.

  2. If anyone want the glaze recipe I will gladly post it.

  4. Brad, here you go .....

    Bourbon Sauce Glaze

    1/3 cup Bourbon

    1/3 cup apple juice

    3 tablespoons packed brown sugar

    3 tablespoons soy sauce

    2 tablespoons cider vinegar

    1-2 cloves garlic

    ½ teaspoon grated fresh ginger

¼ teaspoon coarse cracked black pepper

Also  2 tablespoons water and 1-2 teaspoons cornstarch

Mix all ingredients except water and cornstarch in a sauce pan. Let simmer for about 10 min. or until it starts to reduce. At this point stir the water and cornstarch together then add to pan. Stir into sauce. Cook and stir until slightly thickened and bubbly, cook and stir about 2 minutes more.

Note:  I think that Oxford Street added some whole peppercorns,    up to you.  This stuff is excellent on steaks, pork chops and chicken. Probably be good on shrimp or just about anything else.

Thanks Gary. As I was reading down the list, I was thinking that the chicken quarters I'm going to do tonight would like a little sauce........and then I read your comment about good on chicken. Yummm

  10. Hey Gary,

I just caught this post of yours from last year. Can't wait to give this recipe a try. I'm thinking either wings or country style ribs. Man it sounds so good.

  11. I do miss Oxford Street, that was one of our very favorite places   And that glaze is fantastic

For baking squash - try making a paste of brown sugar and bourbon (or rum). Add some spices and brush it or spoon it on.
