Ok, need some thoughts on this one. I've made a buttload of boudin over the years, but I've never seen this before.
I made some boudin a few weeks ago, vac packed it, let it sit in the house frig for a couple of days since the garage frig took a dump. Got the new frig, tossed the packed boudin into the new freezer and left it.
Now, the last 2 packs I've pulled out and put into the frig to defrost, swelled up to the point that the vac bag was almost tight from the gasses inside.
When i open the bag, it has a very pungent, almost kraut like smell.
All I can think of is that the rice fermented prior to freezing and now it's off gassing after defrost. With the smell it has, it ALL went into the trash. All 18 or so pounds! :th_crybaby2:
Any thoughts?
