Boudin issues - rice fermented!

Ok, need some thoughts on this one. I've made a buttload of boudin over the years, but I've never seen this before.

I made some boudin a few weeks ago, vac packed it, let it sit in the house frig for a couple of days since the garage frig took a dump. Got the new frig, tossed the packed boudin into the new freezer and left it.

Now, the last 2 packs I've pulled out and put into the frig to defrost, swelled up to the point that the vac bag was almost tight from the gasses inside.

When i open the bag, it has a very pungent, almost kraut like smell.

All I can think of is that the rice fermented prior to freezing and now it's off gassing after defrost. With the smell it has, it ALL went into the trash. All 18 or so pounds! :th_crybaby2:

Any thoughts?

Well, it smelled sour enough that I wouldn't eat it. So, Joe, do you think the rice may have fermented, even at frig temps?
 
Sounds like it fermented at some point in time.. not sure when. whats the temp in the fridge.

I just went and looked, it shows 37, but I just loaded it with 3 butts and some chucks.

Another thing that my wife mentioned, I may not have let the rice cool enough before mixing and stuffing. I usually cook the rice much sooner than I did this last batch, so it's cooled and dried out a bit.

CB I think it may have been the rice,being warm I took a package out yesterday no problem.It was lunch today to full to post pics.LOL Nap time
