If you can get them to 200* F they will pull nicely, spritzing is a personal choice as is foiling.
I have a small Charbroil 430 offset, and the past 3 BBs I have smoked I got up to 200 before I pulled them.
There is not really a need. There is some much fat in the butt that it will keep moist on its own. Also, with a large chunk of meat, spraying the outside will not really change the meat itself. All basting or spraying will do is change the texture of the surface. So if you prefer a soft outside instead of bark then spray away.
